Summer classes are ready to go!  As usual, we've pared down some of what we offer during July and August, but there's still lots to choose from.  Be sure to visit our website at www.intoyoga.ca or go directly to our class display page at www.intoyoga.ca/classes.htm.  Find the class, location and time that suits you, then call the facility listed to register.

 

We'll be offering a brand new class this summer at Britannia Community Center.....Yoga for Athletes.  Come try us out.  You'll also still find lots of different Yoga and Pilates classes at the various locations.

Strawberry Rhubarb Tart (Serves 12)
www.vegetariantimes.com

 


You can prepare the crust and rhubarb filling a day before you plan to serve this tart. Simply wrap the baked crust in foil, and place the rhubarb filling in a sealed container in the refrigerator.

Ingredients

1 ¼ cups whole-wheat pastry flour
½ cup all-purpose flour
1 ¼ cups plus 1 Tbs. sugar, divided
1 pinch salt
¼ cup canola oil
2 lb. fresh rhubarb, cut into ¼-inch slices, or 2 16-oz. pkg.
   frozen sliced rhubarb
3 Tbs. fresh orange juice
1 Tbs. grated orange zest
2 lb. small strawberries, stems removed
1 cup all-fruit apricot jam
1 ½ cups nonfat Greek yogurt

 

Directions

1. Preheat oven to 350°F. Coat 9-inch square baking dish with cooking spray.

2. Purée beets in food processor until smooth, scraping down sides as necessary. You should have 1 cup. Set aside.

3. Whisk together butter and sugar in bowl until smooth. Add vanilla, then whisk in eggs, one at a time. Stir in beets.

4. Whisk together flour, cocoa powder, and espresso powder in separate bowl. Fold flour mixture into beet mixture until just combined. Stir in chocolate chips. Pour into prepared pan.

5. Bake 30 minutes, or until toothpick inserted into center comes out almost clean. Cool, then cut into 16 squares.
