10)    Recipe

Fennel and Orange Salad with Walnuts (6 servings)
published in www.vegitariantimes.com

The secret to this salad’s success is to slice both the onions and fennel as thinly as possible. Pull out the slicing blade on your food processor or use a mandoline slicer, if you have one.

1/2 cup chopped walnuts
1 cup thinly sliced red onion, slices halved
4 medium navel oranges or tangerines
1 medium fennel bulb, trimmed and halved lengthwise, thinly sliced (about 1 cup)
1 cup chopped fresh parsley
1/4 cup chopped kalamata olives
2 Tbs. olive oil
1 bunch watercress, trimmed

Directions:
1. Toast walnuts in skillet over medium heat 3 to 4 minutes, or until browned and fragrant, stirring constantly.
2. Place onion in shallow bowl, cover with cold water, and let stand 15 minutes. Drain and pat dry.
3. Cut peel, including all white pith, from oranges with paring knife. Cut segments free from membranes over medium bowl to collect juice. Add orange segments to juice.
4. Add onion, fennel, parsley, olives and oil to oranges, and mix gently. Season with salt and pepper. Let stand at room temperature 30 minutes for flavors to blend.
5. Divide watercress among 6 salad plates. Top with orange mixture, sprinkle with walnuts, and serve.

11)    Bone Density Clinic

Finally, a date has been set for our Bone Density Clinic.  Mark your calendars for Saturday July 14 between 9am - 1pm.  If you are interested and have not registered for this clinic yet, you may still do so by emailing me at info@intoyoga.ca.  Please make sure you leave a phone number as well.

Each appointment will take 10 minutes.  I will be sending out a time request schedule shortly to everyone that has expressed interest.  You will be allowed to pick your three best times for an appointment.  I will do my best to accommodate you.  I am hoping to have some extra incentives for you on that day as well.  Be sure to contact me soon if you want to participate.

Using ultrasound on the radius of the forearm, the procedure is quick, painless (no needles) and very accurate. The results are immediate, easily understood, and you can take them directly to your doctor.  Because this test is by ultrasound, it is even safe during pregnancy.  The cost will be under $40 (gst extra).

The company we will be using is OsteoGuard.  They use the very latest equipment and their testers are highly trained experienced professionals.  You can check them online at www.OsteoGuard.com.

If you are interested in participating, please make sure you contact me early at info@intoyoga.ca
